chocolate cookies. need i say more?

I love chocolate.

I love chocolate more than I love chocolate.

I saw this recipe for Outrageous Chocolate Cookies and my choc-a-holic self needed them right then. I assembled the ingredients and made them. Super exciting story, eh? It is if you love chocolate.



The blurred out part of the above picture is where the baking powder belongs. Not baking soda.



Measure out 8oz of semi-sweet chocolate.


Melt it together with 4 tablespoons of butter.


While that is happening, sift together the flour, baking powder and salt.


Take the chocolate-butter mixture off the heat just before it's all melted together. You don't want it getting too hot.


In your  mixing bowl measure in the brown sugar, eggs and vanilla.


The directions says to beat "until light and fluffy". This is after beating it on high for 3 1/2 minutes. I figured that was good enough.


Turn the mixer to low and add the melted chocolate. Stop and scrap the bowl down. Then turn mixer on low again and slowly add the flour mixture until barely incorporated. Finish stirring the rest in by hand.


Then stir in the package of semi-sweet chocolate chips. The batter will be runny. Really runny. So runny that you'll be tempted to add more flour or just drink the batter because you'll feel all is lost.


Especially after scooping the runny batter onto the cookie sheets and they look like this.


But have no fear! For they will emerge out of the oven looking like this!



And the batter does thicken up some as it sits on the counter awaiting its baking time. This is what the second pan of pre-baked cookies looked like.


And here's the last batch of cookies before being sent to bake.


It's very important to let them have the 10 minutes of rest time on the cookie sheet after coming out of the oven. You'll end up with a squishy mess of a cookie if you become impatient.

Outrageous Chocolate Cookies

Ingredients

8oz semisweet chocolate chips
4 tablespoons butter
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 salt
2 large eggs
3/4 cup packed light-brown sugar
1 teaspoon vanilla extract
1 package (12 oz) semisweet chocolate chips

Directions

1. Preheat oven to 350'. Melt 8oz. chocolate and butter until just melted; do not overheat. In another bowl, sift together flour, baking powder and salt.

2. In a mixing bowl, beat together eggs, brown sugar and vanilla on high until light and fluffy. Reduce speed and beat in melted chocolate. Mix in flour mixture un just combined. Stir in chocolate chips.

3. Drop heaping tablespoons of dough onto baking sheets. Bake until cookies are shiny and crackly yet soft in centers, about 12-15 minutes. ((mine took 12)) Cool on baking sheets 10 minutes; transfer to a wire rack to cool completely.
