It's time for a cookie revolution!
Here's my contribution to the cause:
Probably the Best Peanut Butter Cookie, Ever.
INGREDIENTS
Cookie Dough
3/4 cup unsalted butter, softened
1 cup peanut butter ((chunky or creamy))
1 cup sugar
1/2 cup firmly packed dark brown sugar
2 large eggs
1 Tbsp pure vanilla extract
2 1/2 cups all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/2 cup miniature semisweet chocolate chips
1 1/2 cups chopped peanut butter cup candies
Gooey Topping
3/4 cup peanut butter
1/3 cup firmly packed dark brown sugar
1/2 cup sweetened condensed milk
2 Tbsp light corn syrup
1/4 cup confectioner's sugar
1/4 cup unsalted butter, softened
DIRECTIONS
Cookie Dough
Preheat oven to 350.
In a mixer bowl, cream butter.
Add peanut butter and sugars and blend well.
Mix in eggs and vanilla.
Slowly add in flour, baking powder, baking soda, and salt to make a soft dough.
Stir in chocolate chips and peanut butter cup candies.
For each cookie, form about a golf ball size dough ball and gently press on prepared baking sheets making a shallow thumbprint in each ball of dough. Set aside.
Topping
Blend together all ingredients together for 2-3 min to make a mixture that holds together.
Deposit a large spoonful--about 1 tablespoon--of filling, onto each ball of dough, and press lightly.
Bake until just set - about 12-14 minutes. Don't overcook!
Let set on baking sheets at least 5 minutes before removing them to a wire rack to finish cooling.

I am finally making these today. Yes, 6 month later. I am just having a hankering today for peanut butter and these will do the job. I will let you know how they turn out for me.
